    I had most of the ingredients on hand or in my garden. Super easy to make, great for summer, light and tasty. Obviously I love it. Made the recipe exactly as Rachael says and it is perfect for us. I also love her heavier recipe for chicken and fennel which we LOVE but it is more suited for the cooler months in my opinion.

    Great taste...I probably will try it with boneless,skinless thighs next time.It's an attractive dish. Great the next day if you have any left.:

    I used jar roasted red peppers, and a bit more balsamic...I've never had fennel other than seeds in italian sausage, and it was sooo good. I only used 5 thighs, 1 fennel bulb one onion...This ones in the rotation for sure!
