I made the Colcannon for lunch. Trying in incorporate kale into a diet isn't easy. I steamed the Kale. Didn't have any Thyme so I used poultry seasoning. It was wonderful and very filling. I feel healthier already!! I would love to see more Kale recipes since it is such a healthy and affordable option, thanks Rachael!!

I steamed the potates with skins on instead of boiling - gives the potatoes better flavor. But if I don't count the extra 15 mins of cooking time, it still would've taken me longer than 25 minutes and I didn't even make the braised root vegetables. However, the seasoning of the mashed potatoes with kale tasted great. This is a great way to trick the family into eating their dark leafy greens.

I'm Irish and made this meal last night for my 100% Irish boyfriend- and we both loved it! Will be making it for family next. Also, if anyone cares, this meal is pretty Weight Watchers friendly too (it's low in points value.

I took a gamble and did this one for a St. Patricks Day dinner party. It was easy and turned out great! I was a little skeptical because there didn't seem to be much seasoning going on in the recipe, but everything the lamb, veggies and potatoes were delicious. My guest were raving fans

Both the lamb and the colcannon were awesome! The lamb came out very tender and flavorful (though it did make little flames in my electric broiler which was a little more excitement than I was looking for. The colcannon tastes pretty much like ordinary mashed potatoes, only you know you?re getting your leafy greens so you can feel good about eating it. Cooking the kale in chicken stock (not water was a key step as it did not seem to have too much flavor on its own. I didn?t try the root veggies since the lamb and the colcannon seemed like a complete meal.

Never had a rutabaga before; just like Rachael said, folks don't know what to do with them. Combined with the baby carrots and onions, it's sweet and delicious! Above all, the Colcannon - creamy kale & smashed potatoes - totally rocked!!! My husband absolutely loves them, as do I. It took a few pots/pans to accomplish, but no big deal and well worth what little effort it actually required to prepare. I highly recommend this recipe.

This was absolutely delicious. My family raved and raved. My 6 year old daughter even loved it. The veggies were wonderful, the colcannon was superb, and the lamb was perfect!
