I usually cube up some fresh mozzarella with the mixture. Put it on the toasted bread and put it under the broiler until the cheese melts. I call them my "mini pizzas"!

This recipe is SOOOO good and so easy! Perfect use for my end of season tomato and basil harvest! I sliced some fresh mozzerella on the side and that was a nice taste addition.

This was so easy to make. I use home grown tomatoes, basil and parsley (sometimes chives with fresh garlic on a crusty olive rosemary bread (sliced by the storeand it wowed my dinner guests! They said it was better then restaurant quality.
