This is a regular hit with my family. The bruschetta is a great appetizer to make for your vegetarian friends. I have found that a bit of balsamic vinegar gives this dish an added touch.

I've made this over and over and it just keeps getting better. I've made it for parties as well a side with dinner. Everyone is always impressed.

Love the combination, and with a nice bottle of sauvignon blanc. I did try cherry tomato's the last time I made this...a little difficult to cut up in small pieces but it was still delish....
