I made these today with our New Year's dinner -- they were especially for my husband who adores brussels sprouts. He was blown away -- couldn't stop talking about how great they were. I don't think he has ever complimented anything as much! Both our daughter and I dislike brussels sprouts, but we were also won over by this recipe. Thank you Rachel for a great new side dish!

Okay. Any vegetable recipe that starts with, "cook 3 stips of bacon" is going to get a chance at our house. I'd only had Brussel sprouts once before and the main thing I liked about them was the Hollendaise sauce. This was truly delightful.

I don't care for brussels sprouts, but my husband likes them so I prepared them using this recipe. Wow, was I surprised! The bacon, shallots and bouillon combined making a very delicious side dish...a real hit at my Christmas table!

Nice! I used spanish onion and garlic instead of shallot. I thought the finished product was just a bit sweet from the onion, so, at the table I added a sprinkle of some really good balsamic. Wow!! Will definitely make this again. Just watch the cook time - shorter might be better to keep your sprouts firm.

These brussels sprouts were very easy and very popular at Thanksgiving. I even used frozen brussels sprouts because they were on sale, and everything turned out great. The bacon gave them great flavor. Excellent dish.

I never thought I would say this but, YUM-OOO!! I had some left over brussels sprouts that I experimented roasted with but it came out so-so. Try this recipe! It was delish. I used a yellow onion instead of a shallot and used left over maple bacon : Will definitely use this recipe again.

This was delicious, the brussel sprouts cook perfectly and delicious with the shallot, plus the bacon crunch and flavor makes it even better
