Buffalo Chicken Salad

Ingredients
  • 2 hearts romaine lettuce, chopped
  • 1 cup shredded carrots, available in pouches
  • 2 ribs celery with greens, chopped
  • 1/2 cup ranch dressing
  • 1/2 cup blue cheese crumbles
  • 1 package, 3/4 to 1 pound, chicken tenders, cut into bite size pieces
  • 1 tablespoon vegetable oil, 1 turn of the pan
  • 2 tablespoons butter
  • Salt and black pepper
  • 1/4 cup hot sauce
Directions

Preheat a skillet over medium-high heat.

Combine lettuce, carrots and celery in a salad bowl. Combine ranch dressing and blue cheese crumbles in a small bowl.

Add oil and butter to hot pan with the chicken. Season with salt and pepper and sear for 2 or 3 minutes, then add hot sauce. Reduce heat a little and cook 5 minutes more.

Toss salad with dressing and season with salt and pepper. Top salad with Buffalo chicken and serve.

I love anything buffalo so maybe i'm biased but I thought this was a great recipe. the creaminess of the ranch, the sharpness of the blue cheese and the spicy buffalo kick created an excellent flavor combination. I loved this recipe! It was so easy to make I didn't use any cheese because I wanted to go a little healthier I used some low sodium chicken broth and franks original hot sauce and a 1/2 cup of each and then threw it on the grill for about 15 mins it tasted wonderful!! item not reviewed by moderator and published

Love this recipe! It is one of my husbands favorite recipes. We usually make this once a week. Usually we omit the butter & blue cheese & it taste equally as good. After reviewing other posts on the message board for this recipe, I decided I must of did something wrong, as my chicken did not taste quite right. I think I was suppose to use breaded chicken maybe. I made this with boneless, skinless chicken breasts and cut them into bite size pieces. I used a bit less butter. My son ate his chicken on the side instead of in the salad and all he could taste was "hot". I grilled a bunch of chicken and put some aside plain for my husband who doesn't like spicy. But my boys and I loved the buffallo taste. I made a much bigger sald, more veggies, and it was terrific. The boys also made quesadillas with the leftover chicken and a little blue cheese dressing and a small amount of shredded cheddar (to hold it together)the next day. This was a big hit. I used this recipe as a basis, but prepared it the night before for lunch. Instead of making as a large portion, I just made a single bowl. I wanted something a little quicker so bought a box of prepared buffalo popcorn chicken I found in the freezer section. I heated in microwave the night before. I then put in a container with a small amount of hot sauce in the bottom, shook it and let it sit in fridge overnight. The next morning I had very, good and spicy chicken. I just added to salad.
