I made these for my boyfriend and his friends for a football party. His friends won't stop talking about how good they were! I added a few drops extra hot sauce and had blue cheese dressing for dipping.

My family loves this recipe. The only thing I would change is the name, buffalo chicken is a bit deceiving for this recipe. It's not spicy. It does not have that buffalo style taste. Nevertheless, this is a good recipe. I personally like to substitute the chicken and blue chesse with shrimp and tarter sauce. I make the recipe as is but for some reason I think it just comes out better with the shrimp. Get a good quality tarter sauce (such as the legal sea foods brand for dipping and your set! Thanks Rach!

I guess I was under the impression that it would taste like buffalo wings cause it didn't. Had to had a whole lot of hot sauce in the batter and still added some more onto the chicken after it was done. They tasted good after unloading the entire bottle of hot sauce on them. Will make them again but will marinate in hot sauce like other reviewers did. Guess I should have read the reviews first.

I just made these for dinner. Loved the pancake mix as the batter. I wouldn't call them buffalo bites unless they were a TON hotter. I went as far as marinading the bites in the hot sauce for probably 10-15minutes and they weren't spicy at all. I'd try them again, but I'd have to kick them up another notch.

My fiance and I made these, and after reading the comments and reveiws, decided to add more hot sauce from the get go. Even after that, they still lacked in flavor and were a bit starchy. Rolling chicken in hot sauce after they were done made them a lot better, but only if you like it spicy.

My husband and I have wanted to try this recipe for some time now. We were both very disapointed to say the least. The pancake mix was WAY to sweet, even after we added 5 times the amount of hot sauce than Rachael does. It was also way to greasy. I sat up all night with an upset stomach after trying to digest the grease from the couple I managed to choke. Don't waste your time or money with these thngs.

Saw Rachel prepare this on TV and used this recipe to christian our new deep fryer - easy and tasty. Mild like everyone says, sprinkled chicken with hot sauce and allowed one plus hours to marinate. Loved the sweetness from the pancake batter. I think I preferred it room temp versus just out of fryer - remember to sprinkle with sea salt after frying! Definitely will make again.

I had no idea what to make for a quick dinner tonight. It was around 8pm and I remembered seeing this recipe.
I had the pancake mix and the hot sauce, but not the vegetable oil. I used olive oil instead. I guess that's healthier, right?
These were nothing like buffalo popcorn chicken bites! They ended up looking more like the sweet & sour chicken you get at a Chinese take-out place. Not that there's anything wrong with that.
They stayed crunchy on the outside and a little mushy on the inside, but that wasn't a big deal.
I added Adobo seasoning to the batter to jazz it up with garlic and other seasonings. I wish I used Franks Hot Sauce, because honestly, that's the best hot sauce around.
I had way too much batter left over so I took a huge boneless/skinless chicken breast and cut it into thirds and made a buffalo chicken cutlet from that. I have those and plenty of leftovers for tomorrow nights dinner...
And of course this all didn't happen in 30 minutes. I had Rach's experience and expertise, i am sure it could've been done in 30 minutes!!

I cannot get over how easy this recipe was! After the first batch came out, I decided to add tons more hot sauce. Then i added finely chopped jalepeno peppers into the batter. OMG! We love it! It has become a football must have in our house!

I loved using pancake batter instead of flour! When I use flour, it never gets crispy and the coating never stays on when I try to eat it. This pancake batter was great because it was extremely crispy and the coating stayed on at all times. I added salt and pepper to the wet pancake batter and marinated the chicken in hot sauce for about 15 minutes. I warmed some BBQ sauce and dipped the chicken in it (and added some extra hot sauce. I will deffinately make this again very soon.
