Loved learning how to make risotto. This was great with the apricot chicken but I will be eating it for quite a while. Make tons.

I was please with the way this recipe turned out. My boyfriend absolutely loved it. I used an extra 1/2 cup of cheese to make it super cheesy. My attempt to make every dish from this episode was successful however I just about passed out when I was done. I don't know how she does it!

I never had risotto before, but I enjoyed it a lot. But I was so surprised at how MUCH this made. We'll have it for days - not that that's a bad thing :

it was pretty good,especially because my 2 year old enjoyed it. I would do it again the only hard part is making all 3 dishes at the same time in 30 minutes.

You would think this recipe would pack alot of flavor. But I found it bland. Overall, did not like the flavor at all. Would not make this again.

This was only my 2nd time to make my own risotto, the 1st time was last night and I didn't add enough liquid. I've been eating other people's risotto my entire life and this recipe is a great one if I was able to pull it off. It's easy to follow and the outcome is perfect. The taste is mellow but robust at the same time. Even my 8 yr. old daughter loved it. My husband and 14 year old raved. I served it with Rachael's orange/balsamic chicken from her holiday feast special. Just a fabulous meal!

I used canned pumpkin instead of frozen butternut squash. The risotto was super easy to make and tasted delicious!
