    I really like this recipe, except for the tomatoes. I would use roasted red bell peppers next time. If you start the roasting right when you start the recipe, they'd be ready by the time you throw the casserole in the oven. My husband is a rabid carnivore, and didn't complain about it being vegetarian. He also wants me to make it again soon.

    This was a homerun in our house! Added a can of black beans when I added the stewed tomatoes. So so so good!!!

    Love this combination. We use a chili powder we got in the Indian section of the grocery and it makes this dish so HOT!

    Because of a new diet, I was taking a hiatus from meat, so I was lucky enough to catch this episode when it aired. I HATE zucchini and squash, but it looked so good when Rachael made it that I had to try it! It tasted every bit as good as it looked. I switched up the recipe a little bit though...instead of baking it in the oven, i sprinkled the cheese over top and let it melt in the skillet. I also didn't add the polenta. All my grocery store had that day was "organic" polenta, whatever that is, and the word organic always scares me a little! I didn't miss it though, this dish was fantastic!

    This recipe was very easy to make. I'm normally not a fan of chili peppers, but I included them anyway and still enjoyed it! I must agree with others when they say its much better the 2nd or 3rd day. The only modification I made was I used half an onion instead of a whole. Plus, I didn't garnish. Next time I make this, I'll plan on eating it the next day only. It lacks flavor the first day.

    i am not a rachel ray fan, yet, but if her food is that good, i might just change my mind.
    i used fire roasted tomatoes, actually, i always used fire roasted when it asks for tomatoes, you can't go wrong there.

    I made half a recipe with two or three changes. I am not a fan of polenta, so I made cornbread waffle to place on top and covered with pepper Jack Cheese. My husband said it was at least 4 star.

    The dish was relatively easy to prepare (just lots of chopping, it fed several people, and it was delicious. I will definitely make this again!
