This was very good. It smells fantastic and is even better the second day as some have said before. I would recommend draining the tomatoes, the casserole was a little too runny for our tastes.

This was a very easy and delicious recipe. I added some extra zucchini and yellow squash to give it a heaftier filling.

This is a great vegetarian dish. The polenta is great and makes it seem a lot more decadent than it actually is.

This was a very easy and tasty recipe. Rachael is still on her game. As for the person who complained about bell pepper, I'm not sure what recipe they were looking at.

I haven't tried this recipe yet and I don't know where she ate calabacitas with bell pepper--everyone in NM knows calabacitas is made with Green Chilis.

first night this just wasn't very satisfying, I don't mind veg. meals but this didn't cut it. as leftovers we added some leftover chicken shredded and it was much improved. still not my favorite mexican flavors, though.

I just made this dish for the first time because I needed to take a casserole to a party I was attending. This was a hit everyone wanted the recipe and everyone devoured the casserole only 45 minutes into the party.

This is about the fourth time I prepared this meal. Of course I knew we enjoyed it, but the real test came when I prepared it for the in-laws, well, "seconds" is always a compliment for me, especially coming from a "meat and potato" type fellow. So, I say, if in doubt, cook it up, everyone seems to enjoy! I have made it as a side dish or as the main course depending on the guests, it goes over well either way! THUMBS UP!!

Good and quick recipe. The recipe was a little vague about the "baking dish". I used a 9" X 13" pan and it worked well.

Great healthy recipe and very easy to make. Serve it with some sour cream on top-yum!
