Carrot Raisin Salad

4 to 6 servings

  • 2 (10-ounce) bags shredded carrots, available from the produce department
  • 1 cup (3 handfuls) raisins
  • 2 tablespoons poppy seeds (available in the spice aisle)
  • 1 lemon, juiced
  • 2 oranges, juiced
  • 1/2 cup (2 handfuls) light brown sugar
  • Salt

Combine all ingredients well, using your fingers to toss and coat the carrots thoroughly. Transfer to a travel container or serving dish. As the salad sits, the raisins will plump a bit and carrots will take on citrus taste.

    I like the classic carrot salad but found this to be a good alternative. Served it with an Indian dinner of marinated grilled chicken, lentil dal, Basmati rice, and tomato chutney. Wasn't the star of the show but a great character actor. I did take an earlier suggestion and grated in some fresh ginger root.
    very tasty and I too added ginger quick and easy
    all loved it!.....i also added a dash of ginger and cinnamon.....
    Sounds great and easy! 
    And jennylola, WOW!!! Did you realize that some people just aren't great cooks, or just learning, or conversely, a total klutz around sharp utensils [like my daughter who cannot grate or cut ANYthing without cutting herself severely]??? Sometimes it's just better not ... ahhhh, never mind. :-} God bless!
    Why did I even look at this "recipe" when I was searching for a carrot slaw/salad. Pre-grated carrots? I would prefer to be more "chef-like" and grate my own. And why give the exact measurement in cups and then explain it again in "handfuls" What kind of man-hands do you have to have to be able to hold a cupful in them? But as always, thanks for telling me exactly in the supermarket where to find my items. The poppy seeds I had been using all along were from the garden department.
    Very easy to make and is a great alternative to the more fattening mayo ones.
    A refreshing new way for carrot raisin salad!! Some of the family is not too keen on mayo or salad dressing type dressings for this salad......but this is definitely a keeper for sure!!
    If you like carrot raisin salad this is easy I do add a little mayo & pineapple juice to mine too

    my husband says that this recipe makes him think of heaven. i have to trick him into eating veggies, so this recipe gets an A+ in my book. i've mixed the raisins up with dried figs or prunes, which worked great.

    Maybe I needed to add some pineapple. Not bad and I really like the fact that there is NO mayo in this salad especially because I do not like Mayo. Loved the fresh fruit juices.
    Easy, quick, fresh, and for a little zip I added a little fresh grated ginger. Delicious
    Too sweet. I'll try it again, but without the brown sugar. Very simple to make if you purchase the grated carrots.
    Very simple to prepare (with the tip of buying carrots), and has a smooth, sweet and tart taste. Excellent!! Have not ever added sugar, nor poppy seeds........a nice tasty touch to this recipe.
