I only made a half batch because I really didn't think I'd like it. I'm not crazy about cauliflower, but I'm trying to include different vegies in my diet. The soup was wonderful! I substituted canned fat free evaporated milk for the half and half. I also used dried thyme instead of fresh. I didn't even put the cheese on it, and it was still very good. I'm going to make a larger batch next time!

I made this recipe following the exact guidelines of the show and the recipe. It looked so good on the show. It looked so good in the pot when I made it. I even had some bread bowls made up to serve it in. This soup had no flavor or taste to it. It was probably the worst soup I've ever had. Rachel Ray's recipes are usually outstanding. Her show is great. I just didn't like this particular one.

I first tried this recipe while on a low carb diet, figuring that all of the ingredients were fairly low carb (made without the garlic dippers, unfortunately and this might be something new and different. I was pleasantly suprised at just how good this soup turned out! It's really terrific! Whether you're trying the low carb thing or not, this is definitely a soup worth trying. It's rich and creamy, and really hits the spot on a cold winter day.

Delicious soup that was easy to make and was enjoyed by everyone. Even my kids asked for seconds. Very rich and thick, you could make a meal alone with soup. Definitely a keeper.

This recipe is so tasty. I haven't been big on soups in the past but this recipe changed my mind. My daughter who is very picky & not big on veggies loved this soup & the dippers. It's filling enough to be a complete meal as well. I like lots of parmesan cheese on it, so that isn't as low fat as I'd like, but I figure the veggies make up for it. :- Great recipe. This is a keeper.

What a great, fast way to get more cauliflower in your diet. I stirred cheddar cheese into the soup before serving - a nice addition.

This was the best soup! I've been searching for a recipe for years and this was better than what I had had a long time ago! I used canned evaporated milk instead of whole or 1/2 & 1/2. Good substitute. Thanks Rachel.

the soup was very simple to prepare. Tasted of cauliflower but was very under-spiced. Needed alot of hot sauce to perk up the flavor. However, substituting vegetable stock for chicken stock makes this recipe totally vegetarian and does not greatly alter the taste

Gets 5-stars because it is a restaurant quality soup. I made some substitutions to make it lower fat and lower refined carb. I left out the butter and the flour. Don't skimp on the thyme as it adds tremendous depth of flavor. To add a bit of heat, I added fresh coarsely ground black pepper at the end (no hot sauce. I didn't bother with the parsley, parmesan, or dippers.
