I was so excited, with the results of this recipe. I'm not exactly a fan of veggies, but I had a head of cauliflower, and thought what could it hurt.(after all it's Rachel's recipeI made the soup, and it was better than I could have ever imagined.(cauliflower soup just didn't sound so great to me, I was wrongMy first try, with this recipe, was last week, and I'm going into my kitchen to make another batch, right now. Please,give it a try, you WON'T be disappointed. it's really yummy!!! I ate mine with, just a toasted cheddar cheese bun, I get from a local bakery . Totally satisfing, and Very tasty.

I have never had or made cauliflower soup because it just didn't tickle my fancy. My wife asked me to make it and boy was it a hit. I now make it at least once a week. The grand kids love it which was a suprise. The only problem is no matter how much I make there is never any leftovers. I haven't tried any other cauliflower recipes listed on the site. I figure if it broke don't fix it. Thanks Rachael Ray.

I've made this soup a few times too and my husband and I both love it! Once I subtituted broccoli and it was fine, but we both really liked the cauliflower. Maybe next time I'll do half of each!

I liked this soup very much! I love cauliflower soup! I must first tell you that I once ordered cream of cauliflower soup at a fine restaurant here in New Orleans that was so good I ordered it again for dessert! Our European waiter didn't even bat an eyelash, but when he returned after dessert, he made a very dry joke "Perhaps madame would like a little more soup with her after-dinner drink."
My invalid mother even finished the whole bowl! And that doesn't even count me and my husband who loved the taste. It was much more than the sum of the parts. I used LOL fat-free half and half for the first time, and it was quite good tasting. I did use real butter, as in the recipe, which makes all the difference in taste, and I seasoned it highly. And I even ordered one of those "boat motors," as Emeril calls them (the $30 Braun just reviewed in Fine Cooking, left it a little chunky, and it was great. That's enuf.

I was suprised how easy this was to make and it was really good too. I took the advice of using regular milk and it worked fine as far as I can tell. My roommates like it too. :o

This soup is great! I'm not a big vegetable lover, but I feel healthy when I eat this soup. I make it with 1/2 califlower and 1/2 broccoli and we add pepper flakes instead of hot sauce - yuuummmy!

Made this for dinner last night, and loved it. It reminds me of a potato soup, would be very good with sauteed thinly sliced leeks I'll bet.
