    This recipe is excellent just as it is, but please forget about fat and calories and enjoy the real-deal made with half and half...you'll eat less and love it more!!
    (I made it a second time with low fat milk--ick, ick, ick. Not even close to the same result.
    I substituted corn starch for the 'flour' because I'm a Gluten Free girl...happily, no damage done: I topped it with chopped green scallions. Dried thyme works fine, 2 good teaspoons...you may need more salt depending on your 'chicken stock' choice. Optional add ons: cheese in the last seconds, a cup of frozen corn in the last 2 minutes, or fresh chopped carrot added when the onion/ celery is cooked. Such a comfort food!!
    p.s. If you are disappointed, try again...this many people CAN'T BE WRONG:

    This was yummy. I made whole wheat crutons and I put pine nuts in mine and pureed it. It was delicous.

    I made this last night as a simple weeknight dinner. It was very good, and made six good sized servings. I followed the recipe exactly, and also made the english muffin dippers. I may have slightly over-blended with my immersion blender, but aside from that, it's a keeper!

    CAN YOU SAY YUMMO!? I was for some reason craving cauliflower soup one day. I'm not even sure if I've ever had it, or just saw it on tv or menus. I rarely eat cauliflower (I can probably count the # of times on one hand in a lifetime. So I did a search for recipes and found this one, LUCKY ME! I'm ADDICTED! I LOVE IT! Since I started making this soup, I have had it almost on a daily basis. I will make a huge batch that lasts for a week. I've made it for two friends who loved it and I gave them a copy of the recipe. I just now finished eating a bowl of it (and the dippers, of course!! The dippers are a BONUS! Both friends couldn't stop commenting on how good it was, esp. the dippers! I love this recipe and will continue to make it countless times again. THANKS RACHAEL RAY!

    as good as everyone claims!!! I did add 4 cloves of garlic and two chopped handfuls of carrots to the onions and celery, I did not add the cauliflower at that time but later when I added the broth and as well I added one medium potato to make it a little thicker. In the end I gave it a good seasoning with fresh cracked black pepper and it truly was delicious. How can a soup so simple be so good? AND MY FAMILY LOVED IT!!!

    This was very good. I loved the dippers. I went by her book which doesn't puree it....it stays pretty chunky...next time I will puree it.

    My mom made this soup for us when my husband and son and I were living with her. It was so good that even my very picky husband asked for the recipe> Thankfully mom gave it up... thanks Rachel! Its so comforting and yummy!
