    This soup was good, but it needed something else. It only tasted like cauliflower.

    Made a couple minor adjustments...added a potato for thickness and only added 2 tbsp of cream for a lower fat version. Also added some crushed red pepper to vegetables in beginning to add more flavor. Instead of english muffin, I made pita chips with garlic, s&p, parm cheese & crushed red pepper...so good!

    I made this for a family gathering and this soup was the only one that was finished. I used dried thyme instead of fresh and it still smelled great. All my relatives loved it!

    warming soup that brings coziness to a winter day. The texture reminds me of potato soup and the hot sauce is wonderful with it. One adjustment, I used Herbes de Provence rather than thyme which gave it even more background.

    I threw in a ham hock and boiled it for an hour. Then peeled off the meat and chopped it up. I strained the veggies saving the broth and then made the roux and added everything back in starting with the broth and cream. Its a pork fat thang but not for those who are watching their weight. Tastes alot like potato soup.

    Soup is my favorite comfort food a I have always been a huge fan of any food that involves dipping, so the English Muffins dipped in this comfortable soup are nothing but "Yum-mo"!!
