This soup was really easy and tasty. I even used fat free cream to make it "figure friendly" and it was still tasty.

Great meal and it left me feeling satisfied for a surprisingly long time. Husband and I loved it, and leftovers are as good as the 1st bowl.

Both my husband and I really like this soup - it was easy to make and we had lots of leftovers for the week. We are trying to eat more veggies and this worked out great. I would highly recommend this.

Fast, easy, delicious. I added one chopped carrot, and sauteed the veggies a few minutes longer for some caramelization. A swirl of sriracha and some green onions in the bowl... looks like a magazine cover. Excellent by itself or with sliced turkey and apple inside a grilled cheese sandwich.

This is insanely easy and so full of flavor --- you won't believe it! I gave some to my parents and they loved it. It's amazing how something so short on prep time can be so BIG on flavor. Soup is my favorite comfort food and this recipe is one of the best!! You've done it again, Rachael!

I didn't have any milk/cream on hand so I used a 14 oz can of light coconut milk (and reduced the chicken broth by the same amount - YUMMY! May even add a touch of curry later?

Overall a good soup recipe; however, I added lemon and the thyme was a little overwhelming. Also, to make the soup a little heartier I recommend not pureeing all the cauliflower and adding it to the soup as is.

I'm not a huge cauliflower fan, but was pleasantly surprised.

I saw this recipe when she made it on the show and thought it looked good so I tried it and was not dissappointed. I've made it many times and have often been asked for the recipe.
