I have made this a couple of times this winter with soups & chili beans?my guests have loved it. It is just fantastic; so easy, you can toss it together when the main dish is ready.
Light & refreshing.
I'm sure this will be a hit at summer BBQs, too.

This was a very surprising, delightful recipe! Very light and very tasty - I am not a huge fan of lemon-dressed salads, but it worked very well here.
I added some spinach and scallions to the leftovers for lunch the next day and it was good that way as well.

Wow! I didn't know how I was going to like this but I had the ingredients on hand and tried it out. My palette was so refreshed. I cannot wait to share this at my next dinner party. The only thing I left out was the parsley, which I don't like.

I really liked this salad. It was a new concept for my husband and I, a salad of this type, but we both enjoyed it. It complemented the heaviness of the spinach and ham fake bake very well.

Light, bright and the leftovers were even fabulous.
