Ingredients
- Drizzle extra-virgin olive oil
- 2 slices smoky bacon, finely chopped
- 1 small box biscuit mix (recommended: Jiffy) or measured mix for 8 drop biscuits
- 1 cup shredded all-natural yellow sharp Cheddar
- 1/4 teaspoon freshly grated nutmeg
Directions
Preheat the oven to package directions for the drop biscuits.
Heat a small skillet with a drizzle of oil, over medium-high heat. Add the bacon and cook until crisp, about 2 to 3 minutes.
Put the biscuit mix in bowl, and add the bacon, 1 tablespoon of the drippings and the nutmeg. Add the ingredients according to the package directions to form a drop biscuit. Fold in half of the cheese and arrange the drop biscuits on a baking sheet. Sprinkle the tops of the biscuits with the remaining cheese and bake until golden, about 10 to 12 minutes.
Remove from the oven to a serving dish and serve hot.

Wow! Who would have ever thought of putting bacon and nutmeg in a biscuit mix? Rachael Ray that's who and she was dead on! These biscuits were amazingly delicious...like she says on the show just add water and mix it up..everything is already premeasured for you so you cant mess it up. I didnt really measure out my cheese...just kind of eyeballed it and they turned out fantastic!

Very tasty my children loved it. Said it tasted like Red Lobster;s bread biscuits. I was pleasantly surprised that they came out so good. I used Bisquick instead of Jiffy brand and served it with a peaches and chicken dish. Delish!!!

they were just okay. i couldn't taste the bacon at all. maybe they would have been better if i used a more prominent kind of cheese in the batter, such as gouda or gruyere. i just was not impressed with the flavor, or lack there of.
