This is so easy, but it doesn't taste like it... I love it! It really impresses people too. And it's great to make and keep for leftovers.

I tried this and had favorable reviews from my husband. I made will probably make a few adjustments next time - chop garlic a little smaller and use a larger pot. Lots of food and great leftovers!

I really liked this, it was easy to make and I can see how it could be ver versatile. Next time I'll try it with shrimp. Good Job Rachel.

I thought that this stoup was very good. It was most enough to make the vegetables soft, but not soggy. Great job Rachel!!

I really liked this soup; it was great for a 'too-much wine hangover' brunch. The only reason I gave it 4 stars instead of 5 was that I felt like I had to make quite a few modifications, but a really good concept.

I adored this dish! So full of veggies and low in fat. My Dad didn't love it - he gave it a C+ - "too tomatoey" he said. Hubby liked it but said he put in too much parmesan and that the mushrooms were "too chewy."
Bah. I used basil instead of arugula, and just a bit. It was great!
I guess if I fix it again I will use less tomatoes and more stock. Maybe cut the acidity with a bit of sugar. The portobellas were perfect!
I will serve the leftovers over pasta, it definitely makes a ton.
