I deviated from the recipe a bit because my kids like pasta. I left out the potatoes, cut back on the chicken stock and served over noodles. Excellent flavor and works very well for a meal that needs to hold until everyone is ready to eat. I will make this again.

Super easy and was a great meal. The longer it sat, the better it was!

I had to try this recipe ~ what a delicious dish! If you want a lot of food for a couple of days, this is just what you need. Full of flavor and everyone loved it. I didn' use arugula and it didn't matter. There's so much in the "stoup" that we didn't miss it. Tastes even better the second day. Give it a try!

This dish was a hit with my husband. It has very little fat in it but was hugely hearty and full of flavor! It makes more than 4 servings. And we used arugula as the leaf on top. It was divine!

Missing something, but I'm not sure what. The flavor was wonderful and even my picky kids loved it. I cooked it longer to let the potatos fall apart. Really delicious...

This will become a new family favorite, my husband and kids (13, 10, & 8 all love it as much as I do. The flavors mingle beautifully. I couldn't find arrugula so I incorporated baby spinach at the end. Excellent, soups and stews are always a great way to add in more veggies as well!
    Thanks,

I drove home from college for the evening to make this for my parents and we devoured the pot within an hour. If you follow the rules it's hard to mess this one up. The arugala on top makes it! DE-lish!

What a nice dish. I did not get it prepared in less than 30 minutes, but, I doubled the recipe, so I had more to chop/slice.Howerver, it was all complete within an hour. My son thought the crispness of the vegetables were great. This recipe is worth keeping and repeating, over and over again. Yum!!
