    I took this recipe and twisted it. My husband hates any cheese so we substituted the Sub rolls, cheese and mushrooms and used rice! I also chose beef stock and it was really good except I kept the saute going and added stock and cooked it down half way. Once that was done I added my tomatoes and chicken to heat thru and kept the rice and cacciatore separate. That way you can customize more sauce or more rice to your liking. It was tastey but next time I will kick the heat factor from 1 tsp of red pepper flakes to 1/2 tsp. It was better than Southern Living's recipe hands down!

    I asked my husband to rate this, I made a double batch for the Superbowl.
    A little embarrasing, to say the least, I am a good cook.
    Now I have to find a way to use the leftovers. I followed the recipe to a "T"
    Very bland flavor. Maybe if I add some spaghetti seasoning to some pasta, with lots of cheese, it may be salvagable. Sorry, it did not cut it, for us.

    This hit the spot and is fairly healthy if you go light on the olive oil and on the cheese.

    I've made this several times & it's always fantastic. It works great with left over grilled chicken - sometimes I grill extra so I can make this the next day. Everyone in my family loves it & have asked for the recipe.

    I came accross this recipe and decided to give it a shot. It was very good. I left out the mushrooms AND the cheese ( Don't get me wrong, it would have tasted better with the cheese because my husband doesn't care for them, but it was still wonderful. I put them on a cracked sourdough hoagie and it couldn't have tasted better. My husbund, who is normally very picky and not into trying new things said it tasted like it was from a bistro. Thanks Rachel, you saved the day yet again!

    I saw Rachel make this recipe on her show, so I bought the ingredients and tried it. So delicious. And, I have enough left over to put it over a whole chicken breast and/or a bowl of pasta.

    Definitely recommend this recipe for a quick but delicious dinner.

    Tried this one a couple ways. The first time tried it as a sauce/topping for pasta. The red pepper gives it a kick that makes you come back for more. The second was as suggested - sandwich style. I made it for about 12 people, worked very well, but the best compliments came when we decided to top the cheese pizza with it. The recipe is easy, though not really 30 minutes (due to chopping with non cook speed. This one is great for the college kids like myself. The left overs (from a full recipe taste better than when it was fresh (flavor melding.
