This recipe was soooo good! My husband had seconds. I shared some with my parents too...they're not hot on HOT food, but they liked this one. It's even better the second time around. It's easier (and as tasty as chili.

Definitely a keeper on a cold night! This one may even go on a camping trip....yum!!

I couldn't find the roasted tomatoes either so I used diced w/peppers and onions too.

This SToup is great. We had it two evenings in a row.

I am a little confused about Chorizo, however. My grocer had only one brand.
It wasn't as I expected. I thought it would be chunks of pork. It was in a casing but turned out to be ground pork.

It was tasty but pretty greasy. However, the flavor it gave the SToup was very good.

My husband said..."let's have this again".

Frankly, I fell in love with Rachel's style the first time I accidently hit the food channel. She was so refreshing, full of energy, funny and cute as a button. So, almost three times a week now, she's the one I watch and then cook what she's shown. It's been a great experience.

I just add a small can of tomato paste to thicken it up a little more and then it's perfect!

When I made this, I had bought a tube of chorizo thinking that it was already cooked but when I opened it up, it was still mush and quite frankly, it did not look appetizing at all! I went ahead and made the stoup with just the chicken and everything else and it was totally awesome! It tasted like a chicken tortilla soup that you can get at restaurants only better because I knew what went into it and knew that I was eating healthy. I will check my supermarket to see if they have chorizo that is already cooked, but then again I may just leave it out since it was delish without it! I have all kinds of recipes that I would like to try from other sources, but I keep coming back to Rachael Ray because she is just great!
