    This was the best soup I've ever made! I did several substitutions & it still turned out wonderfully. I used 2 good sized baking potatoes (diced up since I didn't have the red on hand at the time, a can of the Red Gold Mex. Fiesta Tomatoes instead of the fire roasted, a few pepper flakes instead of the hot sauce, and a green pepper instead of the red. (Obviously the itch to make this did not come on the same day I was planning to go to the grocery store ; I think this will become my go-to dish for pitch in's. Maybe next time I'll make it exactly right, but it sure turned out well anyway :

    Loved this recipe. Substituted yukon golds for the red potatoes (all I had on hand and white beans for the kidney beans (hate kidney. Great flavor and super easy. Would note that it was a bit on the spicy side so watch out for young kids.

    This was a huge hit in my house, in fact I even made it for my mom & dad and my dad said that it was the best soup he's ever had. He begged me to make it again, and he's never even just asked me to make something again!! Thanks Rachel - You are an awesome inspiration, you've made me enjoy cooking!!

    This soup was very filling and delicious. It did take me longer than 30 minutes to prepare, but was worth the wait.
    And it makes much more than 4 servings. I could easily serve 6 (very hungry adults with this stoup!
