    Love this recipe. Love, love, love it. I omitted the flour and baked it instead of frying it. Not a big fan of arugula, so I made a spinach salad with the oranges instead. I "double dipped" the chicken--dip in egg, then in the bread crumbs, then in egg again and finally in bread crumbs again. I have also used this with salmon. Loved the citrus orange flavor with the fish.

    I made this for dinner and apparently I should have made more, gone in a flash! We are not a big fan of arugula so I served it with a side of risotto. This breading is so yummy I decided to try it on Tilapia - OMG - even my 7 year old granddaughter loved it - she ate 2 (big pieces! The orange zest really makes it come alive, you really have to try this - YUMMY! Thanks Rachael

    My fiance and I loved it!! The orange zest within the chicken cutlet gave it such a great flavor...and the salad was to die for! Such a great summer salad, will definitely be making again and again!

    Delicious and so easy! I made the salad with regular romaine lettuce since that's what I had on hand, and it was so fresh and crisp tasting! The chicken was delicious and even better with the salad!

    This is SO good. I have tried both baking & pan frying (which tastes better. We didn't like the arugula salad so simply had this with risotto once & marinara another time. Just fabulous. Very versatile - you can serve this with any sides you want (pasta, rice, bread, etc.

    LOVED THIS RECIPE! Chicken came out flavorful and moist! I did this with a bit of garlic also and instead of the salad, covered it with marinara and still great.

    Excellent recipe. I made it for my son. We both loved it. The chicken was moist and crispy. And the salad on top was wonderful. I will be making this again.

    This chicken tasted wonderful, was moist and so easy to prepare. I did not make the salad with it, just the chicken. I also added a little garlic salt to the bread crumb mixture. I couldn't stop eating it. Some homemade fetticini alfredo on the side would have been yummy too. Will definately make again.
