This recipe is quick & easy, and my family loved it!! I added a little bit of extra spices to the sauce, but its all a matter of how you like it. I made a whole cassarole dish filled with enchillada's and they were all gone by the end of dinner. I've already have requests to make it again, and I definitely will. Thanks Rachel Ray!!

My boyfriend and I made this recipe, and we loved it. We called them "addictive enchiladas" because they were so tasty and easy to make. Great cooperative recipe because two people can be working on the different aspects of the recipe. We added a bit more chili powder to the sauce than the recipe dictates to add some kick.

This really is a great recipe.
The only thing I add is a bit of light sour cream and nutmeg into the chicken mixture. You must try this! It's one of my wife's favorite dishes that I make.

Very easy to make, chicken had good flavor, but we did not like the sauce on top of the enchiladas. We ended up throwing the extras away because they simply did not have good flavor.

This recipe is one of a kind, DELICIOUS! Not only is it tasty, but this recipe is one that you can make ahead of time and just place it in the oven when you want it! Highly recommended!
