    Delicious.

    I add cheese to the enchiladas before baking.

    The sauce needs a bit of work and more chili powder.

    i have made this several times now. it takes me longer than half an hour but it's worth it. this is the only enchilada recipe that i'll use.

    I've prepared this recipe twice.
    The first time I followed the recipe. While my family thought it was great, I thought there was room for improvement.
    -I used dark meat. Much more flavor though it does add some fat.
    -In the broth I added some yellow corn. I had some on the cob already cooked so I used it, about 1 cup. I also added about 1/3 cup green pepper.
    -When the chicken was finished, I drained the veggies and kept the broth to follow the recipe. After the chicken was shredded, I added the veggies back into the mix.
    -Additionally, I added about 4 oz of Fat Free Sour Cream.
    -Lastly, I didn't make the sauce. I thought it was a bit boring. (sorry Rachael I simply topped with thick salsa (watch the water content or they'll get soggy.

    My family and I enjoyed this tasty and feistive dish. It wasvery easy to make and even easier to eat. THANKS FOR THE WONDERFUL RECIPE I WILL MAKE IT ON A REGULAR BASIS.

    I thought this meal was pretty good except I do agree that the sauce could use a little more ummph. I suggest adding more spices and tasting before you serve....otherwise you'll end up with a sauce that tastes like tomato sauce right out of the can.

    I love this recipe - it's easy and tastes great! The cinnamon in the sauce adds a great flavor, but be careful not to add too much, or it overwhelms the other flavors. I add slightly less than the recipe calls for.
