I only tried the chicken filling, but it was delicious! It was the best chicken enchiladas I'd ever had, and it was my first time trying this recipe.

This is a great recipe that is even better if you dress it up. I took another reviewer's advice and added sour cream and cheese to the mixture. The same person also recommends 30 minutes in the oven - works GREAT. I also bought some spicy enchilda sauce at the store and added it to both the chicken and the sauce. Have fun with this recipe - it's great!

I did have a couple problems with this recipe but it was my error (I warmed up the tortillas as directed but for a lesser amount of time, they fell apart! next time I'll just use them room temperature. And I was out of tomato paste, I just added addtl sauce instead It was wonderful! It was the first time I'd ever made enchiladas. My son wasn't a fan but DH thought they were good too.

I am just learning to cook and yet understood this recipe. The enchiladas were great, and could even detect that little hint of cinnamon without being overwhelming. I added Jalopenos to the chicken for a little kick and it was terrific!!
