    And I thought that I could only get good enchiladas at the mexican restaraunts. It was so perfect that I adapted the recipe for the Cinco de Mayo potluck at my work.

    Nope. I LOVE her recipes, and this one was a disappointment. I didn't like the tomato sauce at all, and I think the chicken was too tough. Oh well.

    This recipe was pretty tasty. The tomato sauce was a little too tart so I modified it the second time. Also, i added black beans to the chicken...yummy!

    I made these chicken enchiladas twice. Came out very good except I like them very hot so I doubled the hot sauce and chili seasoning. Great recipe!
