Tried this a few days ago with all ingredients just as listed. The soup was pretty filling, but the taste was just alright. I have an ethnic palate, perhaps it's just me, but I didn't get that punch in flavors I was looking for. It just felt like one big bunch of ingredients thrown into the pot and simmered together with flavors not in proportion.

I made this soup a few nights ago. We had never had avocado before but it worked great with this soup. My family raved about it and said it was a keeper, best used during cold winter months. Only thing I would do different is cut the chicken into chunks, which was not specified in the recipe. I also substitued a small can of green chiles for the jalepeno and it worked just fine.

I caught an episode of 30 Min Meals a few weeks ago and saw Rachel prepare this. I had to try it! I'm in San Francisco and it has been storming for the last two days so I decided to make something warm tonight. This soup was so quick and easy to make and soooooo delicious. I used a sweet white onion instead of yellow and left a few of the jalepeno seeds to give it a little heat and I added a little salt and it came out perfect. I tried my first bowl with the garnish and the second bowl plain. Both were perfect. I shared the recipe on Facebook for my friends to try and I know they will love it too.

This was great! Didn't have the avocados on hand but will def. have them for when we have this soup as leftovers in a few days! This will be a "go to" in my house for sure.

Rach, this was absolutely delish!! Saw it on your show today and HAD to fix it. Altho' I didn't have the fresh peppers, I used a bag of frozen Birdseye Stir-Fry Peppers & Onions, added 1 medium white onion thinly sliced, and 1 teaspoon cumin. The soup was sooooo good and my husband loves it as it's perfect for a diabetic diet as well. This recipe has endless possibilities for tweaking as well; however, I doubt that any tweaking could make it more pleasing to our palettes than it already is. A KEEPER!!!!

Loved the soup. I added 1 1/2 tsp. cumin. Will definitely be making this again!

Definitely add the Cumin, and don't be shy!
I made this last night and it' turned out really great, a super easy recipe. A few suggestions:
Add the cooked chicken after you've cooked the onions and peppers w while, otherwise you'll have tiny particles of chicken all over from the constant stirring.
I also added about 1/3 a packet of Fajita seasoning, to keep with that 'original' Fajita seasoning we are all familiar with.
Topped with white cheddar, put the chips and sour cream on -top-,
    FANTASTIC!
