We found the soup fairly easy to make. My husband liked it as is, I found it to be slightly sweet. Definitely add the 1 tsp of cumin she did on the show that is omitted here.

When we make it again I may add grill seasoning and red pepper flakes to the chicken while it cooks in the skillet for some added spice and heat.

I've made this serveral times now and it never fails me. I'm watching my calories so I omit the cheese, avacado and chips. This fills me up and is so satisfying, plus it is inexpensive.

The first time my boyfriend and I made this soup we loved it! Then we decided to add our own touch to it...instead of the tortilla chips we used flour tortilla chips, they are a bit thicker and do not become mush in the bottom of the bowl along with adding some flavor. We also dropped the avacado to reduce the fat content. I am not sure what the brand is but they are diced tomatoes that have seasoning in the can with them, peppers etc. (a yellow label on the can they really add some serious spice and flavor.
The best thing to do is make a double batch and freeze it in single servings not only to it great to take for lunches or an even quicker dinner but the longer that the flavor sit and meld together the spicer it gets and all the flavors really come out!

i felt the overall taste was a bit lacking so added 2 tsp of cumin, 2 Tbsp of chili powder and a large pinch of dried oregano. I also scaled back on the coriander and up'd the fresh cilantro as a garnish. We topped ours with the chips and also a dab of sour cream and jarred sliced jalapenos, i had to omit them from the recipe for the kids. I've made this a few times and its great!

We all loved this soup. I only added one can of tomatoes and not as much broth as we like a chunkier soup. I added some cumin as someone else suggested and also a bit of cut up chipotle pepper (since I did not have fire roasted tomatoes.. I plan on making this many more times. Very good. And so easy.

The only change we made to this recipe was the fire roasted tomatoes. We couldn't find them so I used home canned tomatoes. It was a good recipe, but one of the spices was a little much, I think the coriander. If we make this again we will cut way back on it.

A good recipe overall, but both my husband and I agreed the meal would have been much better without the soggy chips on the bottom. We added hot sauce instead of jalapenos and next time will put the chips on top. Also, skip the avocadoes or serve them as guacamole with chips.

Found this recipe and did not have the fire roasted tomatoes in the cupboard. I subsituted a jar of roasted bell peppers with 4 fresh Roma tomatoes which I processed in a food processor. To kick it up a bit, I also added one chopped chipotle pepper and a tablespoon of Adobo sauce. Also, took the suggestion and added 1 tsp of liquid smoke. Taste was wonderful!!. I may try this again with only roasted bell peppers and leave out the tomatoes.

This soup was an extreme hit with my husband and teenage sons, they kept coming back for more! We loved the flavor and the "kick" and the heartiness of the chicken. I did add a cup of black beans and a cup of corn at the end of the cooking process for additional fiber. Overall, this is an extremly delicious soup which is a meal in itself.

Sorry Rachel this recipe has now replaced your salmon patties as the family favorite. I did doctor it up a bit. Added a roasted pablano, some chili powder, cumin and a little corn starch to thichen. My wife works nights so every day I am the Rachel Ray of the house making 2 seperate meals for her. This is a life saver and the best stoup (my version we have ever had. Keep up the good work.
