I am making these for our monthly food/friendship gathering... the recipe looked good and I always trust fellow food network fans... this time guys... well, I don't know. The pancetta would not stay in one piece.. sure, if we needed it to be a certain thickness it would have been nice to know that... also, what kind of fig... mission or regular... big difference when you're trying to wrap these little buggers up... I had to take a break before I grilled them... Do not under any circumstances season with salt and pepper or at least not the salt... the pancetta has enough going on with its own store of pepper and salt... They taste ok, maybe apricots or some other less seedy fruit would have been better... sorry all... just cranky and frustrated as this is one of the first food network recipes that's really given me a run for my money.... Has anyone tried not grilling but roasting them at a high temp? Just curious.....

these were very salty due to the pancetta, which was also hard to wrap around the chicken. It kept falling apart. Maybe it was cut too thin. Figs are good but seedy. Maybe substitute other fruits for them such as dried cherries or apricots. All in all,
just okay!

I made these bites for guests the other day. I had to substitute bacon for the pancetta (couldn't find it in the storebut otherwise followed the directions. I thought the bites were a little too greasy, which was probably because of the bacon, and that the chicken was a bit bland. My guests seemed to really enjoy these, however, which is the reason for the 4 stars. May try these again for guests, but not my cup of tea.

I made this recipe for a potluck dinner, using the chicken tenders and substituting dried apricots for the dried figs, and bacon for the pancetta. When I made the sauce to go with it, red wine vinegar added a perfect snap to its sweetness.
