    Made this for dinner tonight and my son loved it!! I did not put raisins in it and I forgot the parsey when I went to the grocery store. But when I made it, it came out very tasty. I loved olives in it. I think next time I will add a few crushed red pepper flakes. But all in all we loved and we will have this on our dinner menu to have at least every 5 weeks. This is just a nice and different variation for a chicken dish.

    I am not sure why this even appealed to me as I am not nuts about all of the ingredients individually. being pregnant, I guess it just sounded good. I gotta say, this is the first "TV" recipe I have made that actually looked as good in person as it did on TV!! Surprisingly, the combination of ingredients really works. My husband even said it was a keeper. The shopping list is a bit duanting (go to the Spanish food isle so you don't have to pay $20 for McCormicks saffron, also you may find the pimentos here, which as far as I can tell are just roasted peppers. Now that I have the ingredients I will surely make this one again, probably for company next time!

    I loved this recipe...My husband does not usually like menus that have things mixed together and he doesn't like raisins, but he loved this!!
    I just use different varieties of rice as I didn't want to buy the saffron. Too expensive! I'm not sure what the saffron does for the taste. Can someone tell me?

    I hate to give this only 3 stars but it's only because of the way I made it. I didn't see R.R. make it on her show, and just followed the directions after searching for a chicken recipe with olives. I love olives, raisins, salt... But I think I added too much salt. Don't know???

    I've made this the way Rachel Ray made it on her show, and I think it's a fantastic, easy dish that will surprise and please dinner guests. Don't let the raisins bother you: if you simmer it longer than Rachel does (like I do the raisins practically melt into the sauce, infusing it with a subtle sweetness that's a perfect counterpoint to the bitterness of the olives. I also came up with a few variations on the recipe:
    1. When adding chicken stock to the chicken, add an extra cup, then give it extra time to simmer down for a richer flavor.
    2. Add a dash or two of Cayenne or Red Pepper to the stock for the chicken mixture.
    3. Substitute canned Chipotle Peppers for the Pimientos. Slice them the same way.
    4. Boneless chicken is fine for this recipe! Just brown it on both sides, let it cool for a few minutes and slice it into fairly large chunks before returning it to the sauce.

    What a great suprise. I tried this recipe mainly because I really like R. Ray's dishes, but to this point I always avoided dishes with raisins. I just didn't think they could taste good in a main course. However in this meal the raisins seemed to soak up and enhance all the flavors of this dish. I could really pick out the butter and wine flavors soaked up by the raisins. It was really good. I just had plain rice, no saffron, too expensive here. Another great flavor in this dish were the olives. Kind of salty, a nice compliment to the creamy butter and sweet raisins. Highly recommend.

    I had reservations about the raisens, but they were suprisingly good! It was a beautiful dish to serve and went over well at a dinner party (and it was easy!. I highly recommend it!
