    used canned and dried for all the ingredients and it still came out great. put all the goodies in a blender then deglased then added fresh peaches into jasmine rice. ooo la la dry good camoflage. thanks for the inspiration.

    Looking forward to trying this recipe but where do you find watermelon rind? Is it just the white part of the watermelon?

    This dish was amazing! Everyone in my family raved about it and my kids gave it a 10. I did not add the nuts due to an allergy in the family and I used minute rice instead - I didn't want to scare my kids away completely. Also, I mixed up my own seasoning blend as was suggested at the end of the recipe. The flavor was just exceptional. This is a keeper for sure.

    I made the chicken as stated in the recipe but I skipped the chutney in favor of my own mango chutney. The chicken was very good and full of flavor. A couple of small changes I would make: marinate the chicken in plain yogurt, garam masala, and curry, and thicken the sauce with corn starch or flour. Otherwise I wouldn't change a thing. The flavors blend and meld really well together and the result is something really special. I served it over lightly spiced basmati rice with peas and with whole wheat naan and a mango chutney. It was a wonderful and impressive meal which as so quick and easy to throw together!

    We skipped the chutney, my husband doesn't like them in general.

    The rice is pretty good, follow the cooking instructions for your type. We use jasmine and it cooks differently then hers does.

    The chicken was pretty tasty. A bit sweet and I think would increase the amount of Garam Masala the next time. We left out the mushrooms and substituted red peppers instead (nothing good in any of the grocery stores. We didn't really notice the Marsala flavor and if you don't have it, just use chicken stock.

    This chicken dish is quite different. There is a lot of chopping ingredients, but the end result is worth it! The spice of the curry melds wonderfully with the sweetness of the fruit. I had to substiute some ingredients, I used nectarines instead of peaches, just because I prefer them. I had to use pistachios instead of macadamia nuts because my store did not have them.. I did add a little cornstach at the end just to thicken the sauce. .The chutney was unlike any I had ever made, topped the dish beautifully. I can't wait to make it again.
