    This one is a real keeper. Good enough for a frosty night as well as a gloomy damp warm one. Definitely don't omit the tapenade. It defines the soup. I couldn't find it ready made, but it's so easy to do in a mini processor. I added a parsnip and a celery stalk early on in the soup for extra flavor and after I squeezed and zested half a lemon for the tapenade, I threw the shell of the lemon in the soup. An alternative for service is to toast a slice of ciabatta bread, drizzle with olive oil, top with some tapenade and ladle the soup over. Outstanding.

    I love making this recipe. I have some vegetarian friends, so when they come over, I substitute vegetable broth for chicken broth, omit the chicken, add some chopped celery and double all the rest of the veggies (except the potatoes. I've even been known to add some Cannelini Beans for protein! My friends (vegetarian and carnivores say it's the best they've ever tasted!

    We added parmesean cheese and only had broccli-not zuccini. We used a mission fig kalamata olive tapenade and it was just great!

    This "stoup" is amazing! I added sliced mushrooms, celery, and a little more garlic, and used vegetable stock in place of chicken stock. I made it for my fiance and future brother-in-law with corn bread on the side. They absolutely loved it! There was nothing left over! GREAT Job Rach!

    Delicious!! I added lots of mushrooms and it was wonderful. Freezes well, and the flavors get better with time. As one reviewer said, the herbs make this dish -- if you can't find the mix, buy them separate and add per recipe. A year-round go-to meal; great for potlucks, company, and your own family will love it too!

    This stoup was so easy to make and has a great flavor to it. Many of the reviews said it was too greasy so I bought low fat meats and and drained them after cooking.
