This recipe is so easy to make and yes it only takes 30 minutes or less to put it all together. It's great on a cold day or night. The leftovers have even more flavor than the first time. I've even added rice or noodles to make it even more heartier. Don't at the rice or noodles to soon, they do soak up the broth.

I added more chicken stock to thin it out. Very delicious and so simple.

I was thinking of making something healthy and remembered this stoup from a couple of months ago. I have to admit I've never actually made soup, and was really excited (and a little scared to try this. The hardest part was chopping up all the veggies. Never been a veggie fan but all I can say is this stoup is delicious. My mom and my sister, both amateur food critics, loved it. My sister said she had already eaten but that the smell was so amazing she had to try it. I did leave out the olive thing and exchanged the parseley for cilantro because I like the flavor more and turned out great. Instead of the herbs de provence I went with her alternate solution. I think this is going to be a staple at our house from now on. It's healthy, you can have enough for a few days and it's really a meal by itself. Yummo.

Absolutely wonderful and easy. Don't like tomatoes, but left those out and it was excellent.

I made this soup for the first time tonight for dinner for my fiance and I. I used a red wine and left the olive tampenade out. We really enjoyed it, but both agreed mushrooms would be a great addition and that cutting down on the broth would make it even better.

    This recipe is "stoup"id proof.
I put everything leftover in the Veggie drawer. It's always different, but always great. Wife and kids love it especially with some nice french bread.
Keep up the great recipes. :
