Rachael did it again. I prepared this and served it over a salad so I could omit the bread. No dressing was necessary!

It's quick and easy..made me feel just like Rachael Ray because I did it just like she did on her show!!

I made this last week for dinner. The chicken was really good, but my family and I didn't care for the peanut butter flavor sauce with chicken. I'm preparing this again tonight and leaving off the sauce. I'll use salsa instead.

This was a great alternative to an ordinary chicken salad sandwich. Took no time at all to make and it was great with the veggies that I had on hand. I had left over sauce and I think I will mix it with some shrimp tomorrow night and serve over noodles. The recipe will be a keeper in this house!

We love anything satay ... and this was no exception. Only substitutes were boneless, skinless chicken breasts and whole wheat buns just because we had those on hand. Fabulous! Can't wait to use this peanut sauce for a dipping sauce as Rachael suggested. Looking forward to taking this on a picnic to an outdoor concert.
