So good I make these often and make larger batches to cook and freeze. It is perfect amount of spice and we make a hotter version too.

I think this does a great of making ground chicken taste good. I ran out of allspice so Isubsituded apple pie spice.

I love italian but I also dont eat pork so I used this recipe to make stuffed shells and it was great. I just left out the apples and fried the onions and fennel seperatly then added it at the end. It was great I am going to try it as a pizza topping next.

I made these for my family for our weekly Sunday brunch. Everyone really enjoyed them. I used turkey since I couldn't find ground chicken. Otherwise I followed the directions as written. They had just the right amount of seasoning and smelled absolutely wonderful while they were cooking. I will definately make these again.

Well, made this today for the 4 girls at my house this morning. The die hard Rachel Ray fan thought it was okay. One young lady could not eat it. They other 2 thought it would be better made with beef. My husband and I really liked them. I have some left over. Hubby and I will have them on a bun like a burger for lunch this weekend. I like the fact that they are really healthy for you (I made them with turkey. I think the girls just need their taste buds to mature....they are used to cafeteria food! Good job, Rachel.

This recipe is definitely a good starting point -- but something extra is needed to give it a really good flavor. Definitely keep the fennel. Not sure about using the allspice -- since I didn't have ground alspice, I used 1/2 teaspoon cinnamon and 1/2 teaspoon nutmeg, which was very nice. Overall, though, the flavor is ok, but too subtle (even with the poultry seasoning -- which I would NOT increase. Not sure if pepper flakes would give the kick I want, but will try to figure out what else to add to make is more flavorful. I actually ended up having the leftover patties for a quick lunch/dinner with leftover veggie dishes from Christmas dinner -- and they were better in that context than as breakfast sausage. I guess I just expect more from a breakfast sausage -- so, I'll keep experimenting until I can get it right. Also, next time I will refrigerate before forming the patties -- the mixture was very slimy and sticky, until cooked.

I needed a quick sausage recipe in a pinch and stumbled across this one. I used a little more seasoning than it called for and since I only had a little under a pound of chicken which I ground myself in a food processor, I compensated with extra firm tofu, grinding it in the processor with the chicken. My kids LOVED them & so did I. I think it also helps to let the meat set with the seasonings for a few minute before cooking so that the flavors infuse in it.

This is the best recipe for breakfast sausage I have ever tried. I have even made it without the apple and onion and it's delicious! My husband was very impressed with the flavor.

I really like these chicken sausage patties. I have made them several times and always double the recipe and freeze some raw patties for later use. For those of you that thought they were a little dry, dry melting some low fat cheese on top. I also like a bit of a kick so I add some crushed red pepper to the patties. Thanks Rachael!

Great recipe but not quite spicy enough for me. I left out the fennel, because I didn't have any, added Montreal Steak Seasoning and creole seasoning. Those two additions gave it the spice I was looking for.
