    This recipe was easy and tasted great! I used 4 sheets of phyllo dough, though. They made a sturdier shell for all the filling. This would make a good party appetizer in mini muffin cups, also. You'd need to chop everything a little finer, though.

    This was very last minute so I didn't even use the pastry in the muffin pan. I just used the chicken mixture and ate that by itself. It was still delicious. Very fast and easy. It was a big hit with my husband, too.

    I tried this recipe without the chicken, and increasing the sun dried tomatoes and spinach a bit. I too found the philo a bit hard to work with - and the one I bought needed a 2 hr thaw time, definately not a 30 min meal! [I don't know if all philo is this way, or just the one they have at my grocery store]. I found the recipe was a bit salty - probably won't add salt to the philo the next time I make this. Fresh spinach worked great. I also used dried bagged tomatoes, rather than that in oil, which worked OK.

    This went together pretty quickly. I've never worked with phyllo dough and I was a little intimidated by it, but it was very easy to use.

    I used fresh spinach because I had a huge bag. I also used boneless thigh meat chicken, because it was cheaper. That was a mistake, as it made the food a bit greasy.

    So, thanks Rachel for this impressive looking and tasty recipe.

    This recipie is delicious. The whole family has fallen in love with it. The only thing is to be very careful when working with the phyllo dough. ;

    Made this tonight and loved it! Very easy and fun to make and it looked great on the table. Can't wait to make it for guests! And we had leftover filling (did the 6 jumbo muffin phyllo cups and will use that to make a wrap for lunch!
