This recipe is truly great! The tastes and texture are refreshing and filling. The best part, next to the wonderful taste, was that my familly did not complain about all the vegetables they were eating! Everyone was so excited with the look and taste of the phyllo cups that no one minded the spinach. Terrific! My only negative comment goes towards the making of the phyllo dough cups. I found that too much butter on the dough made it too flimsy to work with and shape into the muffin tins. Also, be careful not to put too much butter on the dough that will come to sit inside the muffin tin. My experience was that the dough at the base of the muffin tin did not cook all the way, because of too much butter, and the dough sticking up out of the muffin tin began to brown or even burn too soon. However, after figuring out the right amount of butter, it was all worth it. The meal is really a very tasty treat and great way to get vegetables into dinner guests that ordinarily would avoid them! Thank you!

My whole family could not believe that I made this..The presentation is beautiful! It looks like something they serve at a fancy restaurant. It was very easy to prepare. I did not have sun dried tomatoes on hand so I used roasted red peppers instead. It was fabulous. Rachel I cannot thank you enough! You are awesome!!
