I used this as an appetizer at my sons bday party. My inlaws are restaurant level cooks I can never usually keep up, I had a lot to prove...this was one of the recipes I used and they all were impressed and requested the recipe among other party goers. I altered Rachels a little bit. They sell mini phyllo cups in the supermarket next to the regular phillo so I just used those to make it bite size. That takes off half the prep time and ingriedients of the posted recipe. Great for parties. In the future I would take out the chicken for a longer party life time (we had people coming and going though most of it was gone right away, you really dont need the chicken noone even notice there was chicken in it I had to cut is so small for an appy. there was enough flavor without it. I added 1 teaspoons red pepper flakes for flavor.I may add a little chopped black olive next time just for fun. It took me 20 minutes to make this great appetizer. The presentation looked great. you just put it in a big bowl add the feta and scoop a spoonful into each phyllo cup. Its great to have the just throw it all in recipe. Its just so easy.
I just love anything with spinach and feta.
    Thanks Rachel!

This was a great tasting recipe as well as looking impressive. I'm a terrible cook, but thanks to Rachel Ray and the other foodnetwork folks, I've been able to fool my significant other into thinking otherwise. The phyllo dough fell to pieces when I tried to unwrap it, but, for others who had the same problem, have no fear just butter the pieces and layer them in the muffin cups. They stick together and come out just fine. This recipe is going into my excellent folder.

I made these this afternoon, in a huge hurry. They were so easy to put together and tasted absolutly fresh and wonderful! My husband even loved them! I used butter flavored cooking spray to cut out some of the calories of the butter. They were phenominal!

This a great and easy dish. I did not have phyllo but had all other ingredients (actually I used fresh spinach. I served it over pasta and it was unbelievable. All the flavors taste great together. I wish I had some toasted pine nuts and I would have added that also.
    Thank you!!

I made these phyllo cups as an appetizer for a friend's Easter dinner. They were a great finger food and everybody loved them.

Very quick and easy to make. I used puff pastry instead because I had it handy, scooped out the top then replaced it on top of the filling. Looked like something out of a magazine and tasted just as fab.

This dish was excellent! My husband was looking forward to leftovers the next night.
I used puff pastry instead of phyllo and added, shallots, carrots, red pepper, fresh basil and parsley. Then I served it with a thyme basil creme sauce. It was sooooo good!!!!

This recipe does call for a little bit or work but it's worth it. The combination of flavors - particularly the sun-dried tomatoes - are really nice.
