I LOVE this recipe. I have made this recipe several times and make a different variation each time. Sometimes I use 3 additional tablespoons of heavy cream, season the chicken with italian herbs and substitute the orzo with angel hair pasta or rice. Easy to make and a great for a weekeday dinner.

After reading many reviews of this recipe, I made some alterations on the first try. I boiled the orzo in the chicken broth and reserved the broth for the rest of the recipe. I only needed half a cup more for the sauce. I also used five tablespoons of aged balsamic vinegar and added two extra tablespoons of cream. I seasoned the chicken with Emeril chicken rub. I not a fan of parsley, so my recommendation would be to leave it out. All-in-all, it turned out well and had nice flavor. It was good. I would have rated it higher if it had not taken me an hour to prepare the meal. The prep of the veggies really prolongs the process.

It was easy to make, but it was really bland.

Awesome! If you love mushrooms you will love this... I never eat left overs but, definitely couldn't resist it 2 days later! I think it would also be great served with rice.

Very good. Be careful with the vinegar.

will definitely be making this again!! made it for myself and my husband tonight and we both really enjoyed it! as someone who loves mushrooms i knew this recipe would be good since you use tons of mushrooms! how can you go wrong!! i only used 1 clove of garlic, mine was enormous and i thought two huge ones would be a little over-powering. was my first time using balsamic vinegar in anything and i definitely liked the sauce! i followed some other reviewers ideas and used extra chicken stock, cream and balsamic vinegar to make more sauce and also cooked the orzo in a mix of water and chicken stock to get some extra flavor. i'm finding through cooking different recipes that i'm not the biggest fan of parsley so i omitted that step at the end but otherwise pretty much followed the recipe. thought it had great mushroomy flavor and will be making this again in the near future when my mother visits!

This was light and delicious! I used thin chicken cutlets so no need to slice chicken. Also needed to add more balsamic for flavor. I did not serve with orzo. Served with broccoli and roasted asparagus plus bread to soak up the sauce. It was not a creamy sauce but more like a gravy.
