What a great way to serve nachos. Delicious and easy. I prepared the meat mixture ahead of time so serving was easy. I think I would use a creamier cheese next time, like a velveta so it would cover the nachos.

I just made this for Halloween for my department's potluck and it was gone in an HOUR. I doubled the recipe and everything!!!!

I didn't do the whole broil thing. I actually put the finished product in my slow cooker, sprinkled the cheese on top, and turn the cooker on "low". This made it easy to take to transport to work and keep warm.

I am definetely going to make this again SOON.

    Thanks Rachel.

The chili mix turned out good but I would add a bit more spice or hot sauce, and I ended up needing to use more tomato sauce than called for. I also would omit the hotdogs in the future, and I am a fan of hotdogs so Im not sure why that wasnt working for me.
One last thing, I would in the future use a better melting cheese than cheddar, perhaps a colby or colby jack, I found the cheddar got greasy in some spots and crusty in others.

These are the best. I served them for Superbowl Sunday, and everyone ate them up.

I have been looking for this recipe for awhile. We tried it the same night it aired back in Jan 2005 because we had the ingredients on-hand. Who doesn't have hot-dogs on-hand w/ a toddler? My husband is always using hot-dogs in "unique" ways (should see his hot dog omeletand he thought it was a fantastic idea to combine them w/ nachos. Thanks Rachel Ray!
