    My kids loved it and so did my husband! It is spicy so you have to be ready for that. I used the listed amount of peppers, you could reduce it if you didn't want it so spicy. Give it a try!

    There's a lot of different flavors going on here, but they play off one another nicely. At first taste, the sweetness was rather overwhelming; a tablespoon or two of cider vinegar fixed that. Even my 2 year old loves it--minus the chipotles, of course. The only other warning is to check your box of instant rice for the correct rice/liquid ratio. I almost ended up with rice soup!

    This was great! However, the bites with chipotle were a little too spicy for me; I'd use the adobo sauce but leave the peppers out.

    Rachel has done it again!!! I tried this and my whole family loved it! I only used 1 chipotle pepper w/adobo sauce and then added 2 tablespoons Chipotle tobasco sauce, because I have young ones in my house that can't handle too much heat. But, it had WONDERFUL flavor and everyone from my 18 year old to my 4 year old said I needed to make it again for sure. Thanks Rachel!!!

    We have had this a few times. I usually make it a bit spicier than I really like, but a little extra rice fixes that problem everytime. Yummy
