    This is a flavor adventure! This was a lot of ingredients, and definitely took a bit more than 30 minutes, but it was well worth it. We used a great powdered chipotle (from a local mexican grocery and it resulted in a really even distribution of spicy/smokeyness, which seems to have been an issue for those who used the chiles in adobo.

    I love this recipe. I do not follow it excatly, but use the idea and I improvise. I always use alot more veggies and if I do not have cashews, I have used walnuts,pecans or peanuts. My husband loves chipolte its a staple in our house so this was a hit.

    This has become one of my husband's favorite dishes! It is quite spicy and the cashews at the end make the entire meal! We serve with black beans. This is simple and I can do it (REALLY!! in 30 minutes!

    I am not a person who leaves reviews but I couldn't help it after this dinner. This is one of the best dinners I have ever made, EVER! It is an exquisite blend of flavors; sweet, salty and a little kick of spicy. It was easy to make and my whole family loved it (ages 3 - 31. I will make this again and again.

    If you like chipotle, you'll like this recipe. I use this recipe when I need to use up vegetables. I've made it with broccoli, carrots, bamboo shoots, etc. Really, anything will work.

    I also make plain jasmine rice instead of making the brown rice that was suggested. It's good either way.
