I couldn't find chipotles at my market so I substituted the chipotle tobasco sauce for the chiles and it came out just find. I did find it a little oily as a leftover though once all the sauce settled to the bottom of the bowl. A delicious and spicy alternative to regular, mayo-laden potato salad!

The pleasantly piquant chipotle dressing has many layers of flavor. Spicy, somkey, sweet, and savory are just a few of the words to describe it.
If you don?t have any orange marmalade on hand, a good tablespoon of honey makes a good substitute. If you don?t like it spicy then add 2 chiplotes and ? cup diced canned tomatoes. This dressing is equally as good as a marinade for salmon, or as a spicy salad dressing. I?ll be making it again.

Although I think that classic potato salad needs mayonaise, I'm not a huge fan of mayo so I thought I would give this recipe a try. It was just okay. I think next time I will try omitting the orange component and add some garlic, lime, and dijon mustard. Maybe go lighter on the red onion too.

I used a whole can of chipotle peppers, and the resulting heat was what us New Mexicans were expecting: a soft burning sensation in the mouth, throat, and stomach, but not actually painful. (I actually have friends who would complain that it wasn't hot enough. If you are not used to the heat, reduce the number of peppers.
My friends liked this dish, even my friend who dislikes potato salad.

Rachel Ray's Chipolte Potato salad was not up to my expectations- my boyfriend and I both love to cook and watched her make this on Food Network. It sounded and looked particularly yummy, so we tried it. The sauce has a sweet first taste with a sharp bite that lingers afterwards. I love spicy food, and the chipolte's in combination with the red onion left me with stinky breath and a desperate need for something to drink. The taste was interesting, but I don't anticipate ever making it again.

Yum! We really enjoyed it but two chipotle peppers is a bit much. One would do for most people.
BTW, to answer a previous review, we are currently in a small town in the mountains of western NC and we had no problems finding any of the ingedients. Seems like some people would like to complain more about the person than the recipe.

My mom invited me over for this meal. If I knew this was what she was serving I wouldn't have shown up. The dressing was cloying and didn't even look appealing. I stopped on the way home and picked up a sandwich.

I was surprised that a warm potato salad made in 30 minutes could have so many complex flavors developed so fast. I guess that's why they call it "30 Minute Meals". I would only use on chipotle- 2 is very intense and very spicy and use more cilantro than what it calls for to tame the heat. It was definitely better cold and on day 2.
