    All of these flavors together was a party in my mouth. The smoky guacamole hits all those erogenous zones on your tongue. You can try not to moan when you eat it, but you'll fail.

    My fiancee said this was the best wrap I'd ever made (and one of the best meals! - wow. It goes great in our low-carb lifestyle, as I used low carb/high fiber tortillas. I did go lighter on the chorizo (which I drained after it browned because I used a "HOT" version (and boy, was it!, but will add more next time. Since we had a lot of heat with the sausage, I used mostly mozzarella with a small amount of the Pepper Jack.
    Regarding the guacamole (very smooth and creamy by the way, I only used one pepper in Adobo as it seemed rather large for this recipe (2 1/2". One was PLENTY. Two would have been a bit too much. My avacados were on the smallish side, so I used an extra.
    REALLY terrific. This one is going into "the rotation".

    This recipe was so good we ate it two days in a row. I used a prepared Guacamole instead - now it’s a 20 minute meal!

    I made this as a Super Bowl app, and it was a hit! The flavors were great, but I wanted to add in a few more ingredients. I sauteed onions & mushrooms and also added some cilantro and a touch of liquid smoke. I used 1/2 pepper jack and 1/2 cheddar. I kept the dip as-is, except for using low-fat sour cream instead. Next time I will try it with manchego. Definitely a keeper!

    Made this for the Super Bowl and it was a huge hit! The shrimp were garlicky and delicious and I loved the spicy cheese.

    Admittedly, I am not a fan of Rachael Ray, nor have I had any luck with the few recipes of hers that I've tried. These were delicious and so much easier than my prior attempts at quesadillas in the oven. I added a clove of garlic to the guacamole because, well, in our house, garlic belongs in almost everything. I also cooked the quesadillas in a pan which wasn't non-stick, but used canola cooking spray instead of oil. It worked perfectly. I can't wait to try this stovetop method with other ingredients. Maybe pulled pork, roasted poblano chiles & Oaxaca cheese. Yum.

    I take back every bad thing I've ever said about Rachel Ray...I didn't follow the actual quesadilla part of the recipe, but the guacamole was out of this world. Super tasty.

    this was a quick and tasty recipe. It makes for a small dinner and is filling. Next time I will drain the chorizo a bit more thorough so its not as greasy.
