    I made these for some friends one night and they couldn't believe how the flavors of the shrimp and the chorizo worked so well together. I got plenty of high fives for this one. Great appetizer or easy quick dinner.

    These quesadillas are a thing of beauty! So easy to make and so tasty. I couldn't find any chorizo at the market, so I used andouille instead. The results were outstanding. They have a nice, spicy kick, and they make for a great meal. I've made these twice, and I'll be making them again and again.

    these are fantastic. the fresher you can go with the ingredients (fresh shrimp, chorizo from the butcher, real cheese the better. And the smoky guacamole is really special. I did not find this recipe overly spicy at all as some noted. It is a great comfort-food (albeit fattening meal and a terrific dish to bring as an appetizer to a party (just re-heat the quesadillas in foil.

    Yum Yum and Yum. What more is there to say. Be sure to use some sour cream to cool it down but wow its good. Way to go Rachel!

    I made this for some friends on a weekend we decided to have a Mexican Passport night, what a hit! I've made it over and over, and since I usually have these ingredients on hand it's great just for a quick meal when I don't know what else to make.

    This is one the easiest recipes to make, and it tastes awesome! Perfect as appetizers for latin-themed menus. The chipotle in adobo is intense, so if you're sensitive to spice, use it sparingly.
