    This was awesome! The spicy chorizo really sets off the milder shrimp, giving it a great "kick"! My hubby is a quesadillo aficianado and he absolutely loved this one!

    This recipe is a hit with everyone I feed it to! Literally! I always scale back on the chipotles, but I tell you, everytime my husband invites one of our friends over for dinner, he requests this recipe for me to make!
    The guacamole is the best! I can't even eat restaurant guacamole anymore! It's tasteless compared to this!

    This recipe is one of my favorites because it is different from the usual chicken/steak quesadillas. I love shrimp and with the chorizo, this calls for a great recipe!

    I loved these and so did all my guests.
    Nobody really cared for the guacamole so now I just make them alone. They don't really need a dipping sauce anyway.

    Delicious, and couldn't be easier! For a milder flavor, halve the chipotle in the guacamole (1 instead of 2. I like the flavor, but prefer slightly less kick. Also, I replaced the pepper Jack with cheddar (mostly because I happened to have it on hand and a sprinkle of Queso Fresco (a mild, cow's milk Mexican cheese.

    Wow these were great! The quac was really spicy so my husband LOVED it, but would cut back the chipotles for my taste. Will make these again and again!

    This was a very delicious and unusual combination for quesadillas. The chorizo available to me doesn't slice though, it comes in a hard plastic casing which is removed to cook. So I used crumbled/cooked chorizo with the shrimp, but the flavors are really delicious together. We plan to serve these as an appetizer at our next party.

    I loved this dish. The smoky guacamole had a little kick at first, but then it was great. Even my wife, who is not fond of spicy food, enjoyed it.
