    Great recipe. We make this all the time and it has become a staple at our house. We just roast a chicken breast and shred it into the chili instead of using ground chicken and it is delicious.

    Easy and delicious. My grocery store didn't have ground chicken so I used ground turkey. I had white beans so used those, I think any bean would be great. I'll probably add another can next time I make this, I like beans in my chili! Might also want to add even more tomatoes next time. Also threw in a pinch of crushed red pepper flakes for a bit more bite. Yummy, yummy, yummy! I skipped the polenta, never been a fan, and made Paula Deen's basic cornbread recipe from this site. Buttery and spongy. Delish!

    this was fantastic!! I did substitute one can of black beans for one pound of the chicken, and threw in a cubanelle pepper for good measure, and changed the beer to chicken stock (bec i didnt have beer in the house at the time but BOY was this DELICIOUS!! NEW FAVORITE!!!

    Made this for the superbowl with a few changes. Used half a canned beer after reading on here some said you could really taste a whole one, we used turkey instead of chicken, and I added tomato sauce. It was delicious after 30 minutes but we let it simmer and it does make a difference.

    The kids and I made this today. It was so very good. After reading other reviews I opted for turkey instead of chicken. I also used ranch style bean cause that's what we had. We also made a spicy cornbread on the side it made the chili pop. Did not do the polenta. The beer is very noticeable in this chili, glad we only used half. Also helpful, I think was letting it simmer a while. It was done and good in a little under 30 mins. But after simmering a while it was even better. This is a great base recipe you can mix up so many ways. Thanks Rachael

    I really only wanted to feed two so I used one half pound ground turkey at 160 calories per serving and one spicy chicken sausage (about 90 calories per serving, and I saved almost 300 calories. I followed the rest of the recipe, which included one can of red beans, a bottle of beer and one half of a 28 ounce can of diced tomatoes. I also used Pam Spray with about a teaspoon of olive oil (saved another 50 calories per serving for the browning. I used one tablespoon of chili powder and 3/4 tablespoon of ground cumin. Because I have to watch my sodium intake, I did not add any salt since the chicken sausage already has 480 mg of sodium. With these substitutions, you will have an awesome SuperBowl Chili that won't tip the scale the next day.
