These shrimp were a hit! Not too sweet as some chain restaurant varieties can be. Just perfect and easy too!

I don't like to fry foods...I just don't like the clean up. This was just way too easy and everyone loved it. Like everyone else, it was a bit tricky to get the coconut to stick....so I will try double dipping in the eggwhites next time too.
I loved the shrimp but as I ate the first one I wanted another layer of flavor, so real quickly I whipped up a dipping sauce just using what I had in the cupboard: orange marmalade, a splash of rum, red chili flakes, a squeeze of fresh lime juice. My daughter even liked this sauce so much she put the extra on some icecream.
I have many votes to keep this recipe....I definitely recommend this dish!

This tasted fine, but I also had a VERY hard time keeping the coconut on the shrimp and this was a VERY messy dish to make. I love coconut shrimp but the clean up just wasn't worth it... I'd rather just buy them at a restaurant...

I tried the breadcrumbs when they were still raw, and they tasted fantastic; I was really excited. I agreed with everyone that they were very difficult to get to stick (and I did try dipping twice - didn't help that much. When I went to fry them, most of the breadcrumbs fell off. What remained didn't have much flavor.
I had a lot of breadcrumbs left over, and I tried it on a piece of chicken. So much easier! I think that's how I'll use the recipe in the future, and hopefully with fresh oil the flavor will come out stronger at the end.

This was fabulous! I think my husband was actually surprised with how well this turned out, and I know he will definitely request this again. I made my own pina colada dipping sauce to go with it like they serve at Red Lobster.

This recipe is so easy I couldn't believe it. One thing I did that someone on here suggested was to put corn starch on the shrimp first. The coating stayed on so nice. With this recipe now I don't have to go out to get this. It was much better with Rachels recipe. Thanks again.

I double dipped in the batter and got closer to the breading I wanted. I would suggest doing something like this to keep coconut on the shrimp. Served with sweet and sour sauce.

Lost some of the breading the first time. The second time was flawless. YUM!
